ACF Certified Culinary Educator (CCE) Practice Test

Candidates must hold a current ACF certification at the Certified Chef de Cuisine (CCC) level or higher. Additionally, they must document a minimum of five years of full-time employment as a culinary arts instructor in an accredited program or 10,000 hours of part-time/adjunct teaching. A significant portion of this experience must involve direct responsibility for curriculum development and student assessment.

While other ACF certifications (e.g., CCC, CEC) primarily validate culinary skills, knowledge, and kitchen management, the CCE specifically focuses on the educator's role. It assesses competencies in instructional design, learning theory, evaluation techniques, academic administration, and the mentorship of students. It is the only ACF credential that formally certifies pedagogical expertise within the culinary discipline.

The CCE evaluation is multi-faceted. It generally includes a written examination covering educational methodology, curriculum planning, and professional responsibilities. Candidates must also submit a professional portfolio and undergo a practical evaluation, which involves conducting a live teaching demonstration, often including a skills lecture and a hands-on practical component, before a panel of master evaluators.

While not universally mandated by all institutions, the CCE is increasingly becoming the preferred or required qualification for lead instructor roles, program directors, and department heads, especially in ACF-accredited programs. It serves as a key differentiator in hiring and promotion decisions and is a significant asset for program accreditation reviews.

The CCE credential must be renewed every five years. Recertification requires earning a minimum of 80 Continuing Education Hours (CEHs), with a specific focus on hours related to culinary education, instruction, or administration. Proof of ongoing employment in a culinary education role is also required to maintain the active status of the certification.
